At the age of 16, Pascal Caffet discovered his calling as a chocolatier and pastry chef in his parents' shop. Young, bold, and talented, he sought training with the greatest pastry chefs in Paris before returning to Troyes and taking over the family business in 1983. Pascal Caffet aimed to "make the best" to "be the best".
He won his first prestigious awards, took over the family business, and quickly imposed his unique style, guided by the quest for harmonious, precise, indulgent, and delicate flavors, and his love for praliné. Young Pascal Caffet, enamored with praliné, a product not considered noble at the time, had noticed that a clientele appreciated its exceptional finesse and softness. This desire to "break new ground" then guided Pascal Caffet.

- Takeover of pastry workshops and administrative offices (Quality Service, Sales, Accounting, HR, Communication-Marketing).
- Opening of the new boutique in Les Ecrevolles, Pont Sainte Marie.
- Reconstruction of new production workshops in Pont Sainte Marie, administrative center, and boutique following the incident.
- Opening of a boutique in Paris 13th.
- Creation of an EXCLUSIVE milk chocolate in partnership with Chocolaterie de L'Opéra, a loyal partner for over 20 years, named Maison CAFFET 002.

- Acquisition of Franck FRESSON boutique in METZ (MOF Pastry Chef) and rebranding as Maison CAFFET.

- Night of October 10 to 11, fire in the production workshop.
- The historic boutique on Rue de la Monnaie in TROYES is renovated and features a concept focused on roasting and burnt wood, echoing the production of Praliné.
- The brand "Pascal Caffet" becomes "Maison Caffet" / launch of the new website www.maison-caffet.com
- Expansion of workspace by an additional 2000m².
- Opening of boutiques in Milan, Tours, Nancy, Strasbourg.
- Exclusive distributor in London.
- Maison Caffet is awarded the label of "Entreprise du Patrimoine Vivant" by the State. This recognition crowns Maison Caffet, in perpetual development, which employs a traditional way of working, passed down from generation to generation, and the expertise of Master Artisan Pascal Caffet.
- Opening of boutiques in the 16th arrondissement of Paris and in Chalons en Champagne, as well as the first online boutique accessible 7 days a week, 24 hours a day.
- 5 chocolate bars and the Club des Croqueurs de Chocolat's "Coup de Cœur" award.
- Launch of a new challenge: the creation of a network of branded boutiques "Pascal Caffet". First openings in Sens, Nevers, Reims, and Chalons-en-Champagne.
